☝🏼 Cook once, ✌🏼 eat twice and don’t waste any veggies! This delightfully yummy carrot soup was made with all the leftover veggies from the farmers market in my fridge that were about to go bad. You know when your veg start to look a little sad, but still not bad enough to throw out yet, these are perfect for making soup! I also throw in all the off cuts of veggies like the leafy stems of celery and fennel are also perfect to add more flavour to soup and extra nutrients 💪🏻 ! Whipped this soup up last night, took 30 mins.
10 x small carrots
2 x small yellow onions
1 x handful of off cuts of celery stems/ leaves
1 x 1/4 bulb of fennel stems included
2 x thumb size piece of ginger
5 x cloves of garlic
dash of olive for sautéing onions
2 tsp turmeric
1 tsp cumin
Himalayan salt + black pepper to season
Chop up all your ingredients in messy chunks
Add dash olive oil to big pot and sauté your onions first
Throw in your veggies, add your spices, stir well to season veggies
Cover with spring water, boil for 20 mins or until veg are soft
Pour in vitamix in 2 batches, blend well and Voila 💥
