Simple snacks and balls of goodness. These cacao date energy balls are full of healthy nuts for protein, juicy medjool dates for sweetness, and a yummy punch of cacao nibs to boost your cells with antioxidant filled energy. These are the perfect bite size snack to have in the fridge, good for breakfast on the go, afternoon pick me, or to satiate that sweet after dinner dessert. I make many variations of these balls, you can use any nuts that you have one hand, but you will need medjool dates, this is what makes them extra sticky and combine well together. Have fun making them with your hands, and good luck not eating the delicious goodness in one day!
7 x large medjool dates, no seed
½ cup almonds
½ cup hazelnuts
½ cup pistachios
1 tbsp coconut oil
½ cup cacao nibs
1/4 cup coconut flakes
1 tsp pure vanilla extract
OR 1 tbsp maple syrup
Pinch of cinnamon
Pinch sea salt
1. Add all ingredients to food processor. Blend into an even smooth, crunchy and sticky mixture forms. You may need to stop and scrape down the sides, and mix any larger nuts to the bottom of mixture. I do this a couple of times.
2. Using a spoon, scoop out even size mixture into hands and roll into round balls, using the palm of your hands. You may use a little coconut oil on your hands, if your mixture is too sticky.
3. Line them up in a glass container, and store in the fridge for 1-2 hours to let them set.
4. They will keep in the fridge 2.3 weeks, but I doubt they will last past the weekend!
